The Raspberry Truffle

The Chameleon is a fine place to eat, drink and party. But manager Matt Wagstaff says some guests don’t want to eat too much before they hit the dancefloor

¬†”We are finding that more people are after a lighter alternative to a dessert, before they get up and dance the night away,” he says. Therefore, head bartender Chris Callow was tasked with creating the perfect after dinner cocktail. Here’s his invention – The Raspberry Truffle:

Ingredients:

  • Vanilla vodka 25ml
  • ¬†Chambord (Black raspberry liquor) 12.5ml
  • Khalua 12.5ml
  • Baileys 12.5ml
  • Milk 50ml
  • Single cream 50ml
  • 2 fresh raspberries
  • 2 fresh blackberries
  • 4-5 ice cubes
  • Cocoa powder to garnish

Method:

  • Add all ingredients to a Boston Shaker
  • Shake vigorously and strain into a Martini glass
  • Lightly dust with cocoa powder and serve
