The Raspberry Truffle

The Chameleon is a fine place to eat, drink and party. But manager Matt Wagstaff says some guests don’t want to eat too much before they hit the dancefloor

 ”We are finding that more people are after a lighter alternative to a dessert, before they get up and dance the night away,” he says. Therefore, head bartender Chris Callow was tasked with creating the perfect after dinner cocktail. Here’s his invention – The Raspberry Truffle:

Ingredients:

  • Vanilla vodka 25ml
  •  Chambord (Black raspberry liquor) 12.5ml
  • Khalua 12.5ml
  • Baileys 12.5ml
  • Milk 50ml
  • Single cream 50ml
  • 2 fresh raspberries
  • 2 fresh blackberries
  • 4-5 ice cubes
  • Cocoa powder to garnish

Method:

  • Add all ingredients to a Boston Shaker
  • Shake vigorously and strain into a Martini glass
  • Lightly dust with cocoa powder and serve
