Just like mom makes

Yummy apple pie made with homegrown, in-season fruit and a dash of cinnamon.

It doesn’t get any better than this! We can almost smell it as we write the words… there’s nothing better this time of year than the smell of a scrumptious homemade apple pie baking in the oven. Total bliss! A traditional, comforting dish, it’s one for all the family and easy to prepare thanks to this month’s tasty recipe courtesy of Edwards Restaurant, based at Cookes Furniture in Erdington.

TRADITIONAL APPLE PIE

Ingredients (serves 6):

For the filling:

  • 5oz golden caster sugar
  • 1 tbsp ground cinnamon
  • 2 tbsp cornflour
  • 600g cooking apples (peeled, cored and sliced)

For the pastry:

  • 400g plain flour
  • 2 tbsp caster sugar
  • 250g butter cut into cubes
  • 1 egg (beaten with 2 tsbp cold water) plus 1 egg (beaten to glaze)
  • 1 lemon (zest only)

Method:

For the pastry:

Place the sugar, flour and lemon zest into a bowl and rub in the butter until the mixture resembles breadcrumbs. Add 1 egg and stir until mixture forms a dough. Set aside a third of the pastry for the lid. Roll out the remaining pastry and lower into a pie dish.

For the filling:

Mix the cornflour, sugar and cinnamon in a large bowl, stir in the apples. Place filling into pie dish, brush the rim with a beaten egg.

Cover pie with remaining pastry and press edges together firmly to seal. Make a few small holes in the centre of the pie. Glaze top with beaten egg. Heat oven to 200C/180(fan)/gas mark 6. Sprinkle pie with sugar and bake in centre of the oven for 50 minutes or until golden brown.
