It’s clemen-time

Give your Christmas Day extra zest with this refreshingly different pud

We all love tucking into fabulous festive fare on Christmas Day but it’s nice to balance out all the rich and heavy offerings with something fresh, light and zingy. This simple recipe using clementines is just the ticket – and incredibly tasty and chilled too. Enjoy!

DID YOU KNOW?

The clementine is a cross between a tangerine and Seville orange and takes it name from Father Clement Rodier, a French missionary who is said to have created the hybrid in 1902. Each clementine contains 35 calories.

CLEMENTINE SORBET

Ingredients:

  • 50g granulated sugar
  • 5 clementines
  • 1 lemon
  • 500ml fresh pomegranate juice

Method:

Add 100ml water with the sugar and stir over a low heat until the sugar is dissolved Add the juices from the clementines and the lemon. Stir, then add the pomegranate juice and pop the whole mixture into the fridge. Once the juice is cold pour into a shallow container and place in the freezer.

When ice crystals have started to form, whisk and then return to the freezer. Repeat the process until you have a smooth sorbet. Serve as a refreshing pudding on Christmas Day…
