Don’t be fooled by the name… Dark and Stormy may sound deep and deedy, but John Warner’s concoction is the perfect summertime drink.
John is the new resident bartender at Chung Ying Central, and Dark and Stormy is part of its new classic cocktails range. John’s version is presented with a bright flame courtesy of a lime wheel doused in Wray and Nephew Rum, which is lit just before serving.
- Angostura Bitters
- 50ml Captain Morgan Original Rum
- Half a baby bottle of ginger beer
- 1 Lime
- 10ml Wray and Nephew Rum
Cut 2 quarters out of the lime and place into a Collins glass. Muddle the lime wedges and add cubed ice on top. Pour half a bottle of ginger beer into the glass leaving a two-finger width space from the top of the glass. Float 50ml of Captain Morgan on top. With the other half of the lime, squeeze out the juice and cut out the flesh. Place Angostura Bitters inside the half lime shell with the Wray and Nephew. Before serving, light the Wray and Nephew to complete the drink.
